Jim, take a look at Balogh Sail Designs. Although you don't have to buy one of their rigs, their leeboard setup should give you some food for thought. Personally, I don't bother with the amas, as I consider them the equivalent of training wheels. It is nice to be able to fly upwind. I agree about using a paddle as a rudder. It works reasonably well and is less hardware hanging off a stern that is not really designed for it.

Though I don't sail my kayak (Pygmy Coho), I did install a rudder, after an 8 mile crossing that required frequent paddle dinking, edging, etc. due to weathercocking in steady wind out of the starboard quarter. Paddled it for several years rudderless. t's nice to go where I want without fuss or bother. Easy to deploy and retrieve (it's from Kajak Sport, a Finnish company). Just returned from 6 days in Clayoquat Sound, B.C. Have lost my enthusiasm for camping on sandy beaches, which led to frequent deletable expletives. Give me a gravel or shell beach every time.
